Mood:
I am so happy & excited. I am also feeling all the trepidations of spending the holidays at my in laws. LOL! I know everything will be fine, but there is a part of me that wants to go running & hide somewhere safe & let judging. I know that they are not (for the most part beyond the human judging we all do subconsciously,) judging me. I just have this voice in my head (hi mom) saying "Mable, Mable, straight & able, don't put your elbows on the table" &" sit up straight for God's sake!" I can't help it. Sigh. I will live & be happy to do so with people that love me & are so much my family. I am thankful for every moment with them.

Life:
Tomorrow we will be going to Clay's mom's for the holidays & then spending the weekend marry. I love it!I have to pack for 3-4days depending on the weather. (We are suppose to get 3-6inches of snow tonight, anyone calling for a while Christmas your order is up!)






Cooking:
I made these for my mom's birthday & everyone loved them so much I am giving them away as gifts.


1 cup sugar
3/4 cup butter or margarine, softened (I use butter flavored shortening, best of both worlds.)
1/4 cup molasses(The darker the better)
1 egg
2 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons sugar
2 tablespoons raw ginger diced fine
Optional: you can add 1 teaspoon of nutmeg

  1. Heat oven to 375°F. In large bowl, beat 1 cup sugar and the butter with electric mixer on medium speed, or mix with spoon, until soft and fluffy. Beat in molasses and egg. Stir in remaining ingredients except 3 tablespoons sugar until well blended. Refrigerate the mixture for one hour, over night is better.
  2. Place 3 tablespoons sugar in small bowl. Shape dough by tablespoonfuls into balls; roll in sugar. On ungreased cookie sheet, place balls 2 inches apart.
  3. Bake 6 to 8 minutes or until golden brown. Remove from cookie sheet to cooling rack.
  You may freeze the dough for up to a month.
