I have been doing homework all day today. I think I have writer's cramp. I am trying to write an instructional paper, it has to be 3-4pages long. I am having trouble not going over 4 pages. I decided to write how to set up outlook 2003. I could write 9+ pages about setting up outlook. I have to scale it down & make sure its easy to understand & follow. I hope I don't make it too hard to understand. Sigh.
I made potato, acorn-nut squash & carrot mash for dinner.
Ingredients:
- 1 acorn squash, halved, seeded, and cut into 1-inch wedges
- 6 red potatoes
- 3 large carrots
- 2 tablespoons extra-virgin olive oil
- Coarse salt and ground pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper
- 2 teaspoons garlic minced
Preheat oven to 425 degrees. On a large rimmed baking sheet, toss acorn squash, carrots & potatoes with extra-virgin olive oil and season with the spices. Arrange the veggies in a single layer and cook until tender, 30 minutes, flipping halfway through. Once they are fork tender remove from the oven. Put all the veggies into a large bowl & mash with a potato masher till slightly lumpy.
Note: you may server with cream or butter to your taste.
