I have a confection. I am addicted to sugar. I love the stuff. Sugar in my tea, coffee (even though I prefer creamer its loaded with the stuff), doctor pepper, candy confections, I so can't get enough of the stuff. I am trying desperately to down size the amount in my diet, but like salt its in everything I swear! Is there an AA for sugar addictions? I would so go. My father is a diabetic, my mom is hypoglycemic & I was diagnosed with hypoglycemia when I was in my teens. Its easy for it to turn into diabetes & with having a parent with it ups my chances. My mom is cutting out sugar from her diet & I have been thinking of doing the same.I just don't know if I can give up my doctor pepper. That's the hardest. I can't have diet or sugar free because mostly they are made with aspartame, a artificial sweetener that has been proven to case caner plus I am highly allergic to it. So thats out. I might have to just settle for carbonated fruit juice made without sugar.  Izze here I come. I also like mineral water with grape or orange juice mixed. That way I can still have the fizz with out the sugar. Sigh, so hard, but I want to live without shots I have to.


I have been busy. I did the vacuuming, mopping, laundry, went & got water (we get water from a natural spring), went to the bank, went grocery shopping & I hand washed my car.  I read three chapters, finished my homework for most of my classes, but I still have more. (Sob!) Wish me luck I still have to get the windshield replaced on my car, (got hit with a rock & it cracked) I have two HTML assignments to do (Yes I am avoiding till the last min,) I still have to read chapter 5 in my networking class & chapter 8 in my writing class. I have this weekend all to myself, so guess what I will be doing. Homework! Yay! LOL! I think I might hurt myself again. :D

16 bag frozen spinach
1656 mils potatoes peeled, quartered (1 1/2 cups)
1656 mils Cheddar cheese grated (1 1/2 cups)
5 slices bacon diced, fried
1 flank steak (1 1/2 lb-2 lb)
118 mils prepared barbecue sauce (1/2 cup)
2 cloves
1 TBS dried onion flakes
2 TBS oil
1 salt
1 pepper 
1 red pepper flakes

Preparation

Drain the spinach well. Chop, season with salt and add red pepper flakes. Boil potatoes until tender, about 15-20 minutes. I usually always add some garlic cloves to the boiling potatoes for extra flavor. You can omit if you like. Drain well, return them to the pot , and dry over medium heat for a minute or two. Off heat, mash lightly into small chunks, then stir in cheese, fried bacon, and salt/pepper to taste. I added some dried onion flakes for additional flavor. Score the meat down the center. Make sure you don't cut all the way through the steak, just halfway. Cut through the top portion creating a "flap" almost to the end, but not through. You want to butterfly it. Do the same with the other side. Avoid cutting the flaps too thin or it could tear.. You should have a long piece of flank steak.
Place plastic wrap on top of steak and pound to about a 1/2 inch thickness. Be careful not to over pound as the meat can tear up on you. You should be able to roll a good spiral.
Season steak with some salt and pepper to taste. Place spinach all over the steak. Top with cheesy potatoes.
Roll up and tie with kitchen twine to keep the filling inside. Sear the steak oil (2 TBS) in oven proof skillet over medium heat on all sides. Brush with some barbecue sauce. Make sure the seam is on the bottom before placing in the oven. Place in a preheated 400 Deg. oven for 30 minutes or until it reaches 145 for med-rare. Let rest for 10-15 minutes before slicing. Don't forget to remove the kitchen twine. Serve with more BBQ sauce or with some sour cream mixed with chives.
