Well I just took my wins admin1 class & I love it! I love it in the sense that its going to be an easy A & I wont have to do much work. Its more of a refresher class for me. I really like the instructor too. He was really nice & supper funny. (Ok, & kinda cute, gees, but in that "I am a decade older" kinda way.) The book we have for the class was not needed but is really well written & is a great reference tool, so I am not that upset about getting it. Plus its written with a sense of geekness that makes it a easy read. The one thing I really like about the class is no home work. We do all the work in class & all we have to go is take a test every week about what we learned last week. (Cake walk.)Plus I lean little tricks I have ether forgotten or did not know. Win,win if you ask me.

My XHTML class on the other hand.... I am wrestling with the idea of ether dropping the class or trying to tough it out. Its something I want to learn, but I don't know if I can learn it in this class. So I am going to talk with my counselor & see what we can work out. There might not be any other option other then taking the class & I am per parred to do that.  I just hope I can keep up if I have to finish out the class. I think I found a book that can help with this class, but its $40 so I don't know if I can get. (Sigh) I will have to wait & see about that one.

On the bright side I did find a new pizza recipe I want to try:
5 min Tortilla Pizza
Ingredients:
  • 1 30cm (1 foot) Flour Tortilla
  • 1/4 Cup Pizza Sauce (see recipe bellow)
  • 100 grams hard Goat Cheese*, shredded
Directions:
Preheat oven with a pizza stone to 250°C (482°F).
Place your tortilla on a hard surface that’s large enough for the entire tortilla. Pour pizza sauce in the center of the tortilla and spread in a circular pattern until you’ve almost reached the edge of the tortilla. Sprinkle with all the cheese.
Slide the tortilla pizza onto the pizza stone and bake for 2.5 – 5 minutes (5 minutes is crispier). Remove carefully – try sliding it off with a fork onto a cutting board and cut into slices.
Makes 1 serving.
*I will use goat cheese because Clay can only eat dairy-free, but you can easily replace this with mozzarella.
Pizza Sauce
Ingredients:
  • 2 cloves Garlic
  • 6 oz Tomato Paste
  • 1 1/2 Cups Water
  • 1/3 Cup Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 Tablespoon dried Oregano
  • 1/2 Tablespoon dried Basil
  • 1/2 teaspoon dried Rosemary, crushed
Directions:
Place garlic in a food processor and mince. Place all other ingredients in the food processor and puree.
Makes about 2 1/2 Cups.
