Lazy day today. I spent most of it doing the house work I did not do on Sat. Now I will have to start packing. I hate packing. I miss all my things. I miss my books, they are the fist to get put away. I miss my DVDs, they are the second. Then I will pack everything that I don't use on day to day base. I will have to wait for most of it because My sister & her fiance are going to spend the weekend in a couple of weeks. Once they are gone I can kick up the packing. Then all I have to do is figure out where everything is going to go. I still have to find a place to move to. I did find a few houses, one that I would love to buy, all I have to do is get the finances together to get it. Its suck a sweet looking house in a wooded area. Bedrooms:5 Bathrooms:3 Size:2,300 sqft Lot:0.67 acres.
 I want it in the worst way, but a lass my sweet Yorke I feel it is not to be. Not unless I can get a fire going under Clay. Plotting........... 
 






What I had for dinner: 

Egg Fried Rice with pork

Ingredients

  • 2 tablespoons groundnut oil (peanut)
  • 3 eggs, beaten
  • 14 ounces cooked jasmine rice
  • 3 ripe tomatoes, sliced
  • 3 tablespoons light soy sauce
  • Dash toasted sesame oil
  • Pinch freshly cracked white pepper
  • 1 large spring onion (green), finely sliced
  • 2oz pork loin (cooked & diced)
  • 1 tablespoon pineapple juice
  • 1 tablespoon Balsamic vinegar
  • 1 teaspoon of raw sugar

Directions

Heat a wok over a high heat and add 1 tablespoon groundnut oil. Add the eggs and scramble for a few minutes, then remove them from the wok, and set side. Wipe down the wok.

Reheat the wok and add the remaining groundnut oil. Add the rice, and stir well to break up the grains. Then, add the tomatoes, and stir-fry for a few minutes.

Return the eggs to the wok, and season with the soy sauce, sesame oil, and white pepper, to taste. Add the spring onions, and mix well. Add in the raw sugar, Balsamic vinegar, pineapple juice & pork; simmer for 1-2mins till sauce is thick. Serve immediately.
