Guess what I made today?
Ingredients
| 1 cup Margarine or butter softened |
| 1 cup Brown sugar, firmly packed |
| 1/2 cup Raw sugar |
| 2 Eggs |
| 1 teaspoon Vanilla |
| 1 ½ cup oat flour |
| 1 teaspoon Baking soda |
| 1 teaspoon Ground cinnamon |
| 1/2 teaspoon Salt optional |
| 3 cups Quaker Oats, uncooked recommend Old Fashioned |
| 1 cup Sun-Maid(R) Craisin or blueberries |
Preparation
Preheat oven to 350 F. Beat together margarine and sugars until creamed. Add eggs and vanilla; beat well. Add oat flour; baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.Variations: Stir in 1 cup chopped nuts. Or, Substitute 1 cup semisweet chocolate pieces or candy coated chocolate pieces or raisins.
